American Wagyu = Japanese Wagyu bulls crossed onto American (largely Angus) cows; it is a genuine crossbreeding program with an unusually long grain-finishing period (~450+ days vs ~150 commodity), which is why marbling is real. CHEF-RELEVANT: 'Wagyu' here means Wagyu-cross, graded on SRF's own Black/Gold marbling scale, not the Japanese BMS. Recurs on Vegas menus (Del Frisco's, Barry's Downtown Prime, Rare Society, CUT, Middle Child, Salt Grass) — its presence signals a good default supplier decision, not a distinctive sourcing story. 'Snake River Farms Wagyu' at a casual/chain venue is often a single burger SKU. OWNERSHIP (2026-08-19): brand of Agri Beef Co., which is itself family-owned and led by Robert Rebholtz Jr., founded 1968 (assets.wagyu.org AWHF Agri Beef bio; agribeef.com). Corporate-subsidiary here means 'brand inside a large family-held company' — not private equity and not a multinational.
