Quality assessment
The Spanish Iberico Quality Norm is a state-regulated four-colour label system, and Cinco Jotas produces ONLY the top tier: BLACK LABEL — 100% purebred Iberico genetics AND acorn-fed (bellota) during the montanera. Pigs range free in the dehesa oak pasture of the Sierra de Aracena y Picos de Aroche Natural Park, eating acorns and wild herbs; hams are hand-salted with Atlantic sea salt and cellar-cured a minimum of 36 months in Jabugo. Producing exclusively at black label since 1879 is genuinely exceptional — the majority of 'Iberico' sold worldwide is red, green or white label (crossbred and/or grain-fed). Owned by Grupo Osborne, which is a large group, but the product standard is legally defined and independently checkable on the leg's own coloured seal.

Caveats
VERIFY THE LABEL COLOUR. 'Iberico' alone is not a quality claim — red label is acorn-fed but crossbred, green is field-fed, white is grain-fed indoors. Anima by EDO's signal says 'Cinco Jotas jamon... reported in tasting menu' — reported, not menu-confirmed; re-verify at source. Ferraro's separately lists 'Iberico acorn-fed pork pluma' with no producer named — credit the acorn-fed claim only if a label tier is stated. OWNERSHIP (2026-08-19): brand of Grupo Osborne, the Spanish family-controlled drinks and food group — so corporate-subsidiary, but the parent is family-held rather than a multinational commodity processor.
