PISCES brings the vibrant spirit of the Mediterranean coast to one of the resort’s most captivating waterfront settings.

Under Executive Chef Martin Heierling, the menu travels from chilled oysters and crudo to shellfish platters, whole fish, prime steaks, pasta, and paella inspired by coastal destinations from Saint-Tropez to Mykonos. Globally inspired wines and coastal cocktails carry the experience from aperitivo into late evening.

PISCES will close temporarily for seasonal maintenance from Sunday, August 16 to Thursday, August 20.

"PISCES represents what Wynn does best — creating original dining destinations that elevate Las Vegas' culinary landscape," says PISCES Executive Chef Martin Heierling.

Heierling brings more than three decades of international culinary experience to PISCES, drawing inspiration from the coastal traditions, ingredients, and cultures of the Mediterranean.

Throughout his career, Heierling has led acclaimed kitchens and restaurant concepts across the hospitality industry, including Sensi at Bellagio, Silk Road at Vdara Las Vegas, and leadership roles with STARR Restaurants, SBE, and Noble 33. Earlier in his career, he trained under renowned chef Gray Kunz at Lespinasse in New York.

At PISCES, Heierling channels a global perspective shaped by travels throughout Europe, North Africa, Australia, and the United States into a menu centered on pristine seafood, vibrant coastal flavors, and dishes designed for sharing.

Where do the vases at PISCES come from?

PISCES monumental handmade ceramic vases—some weighing more than 1,200 pounds—were commissioned exclusively for the restaurant from Kansas-based ceramic artist Melany Sherman. To create these large-scale works, Sherman constructed a custom nine-foot kiln and hand-painted each piece with intricate gold, blue, and white mermaid motifs, making them signature elements that embody the restaurant’s oceanic spirit.

Where are the chandeliers and tile floors from?

Both the chandeliers and the mosaic tile flooring were crafted in Italy. The chandeliers were selected to evoke vintage cocktail-era glamour, while the Italian mosaic floors are made of blown glass and natural minerals that reflect light throughout the dining room.

Is patio seating guaranteed at PISCES?

Patio seating is available on a first-come, first-served basis. While outdoor tables cannot be guaranteed, the team will gladly accommodate requests whenever possible.

Is The Pier reservable?

Yes. The Pier—an intimate extension of the

Aft Cocktail Deck

overlooking the

Lake of Dreams

—is reservable with a food and beverage minimum. This private setting is ideal for celebrations, special occasions, or memorable evenings under the stars.

Start with one of Mariena Mercer Boarini’s handcrafted specialty cocktails paired with a caviar bump and champagne. Continue with selections from the crudo menu, followed by house-made pastas crafted from imported Italian semolina. The signature salt-baked Loup de Mer, deconstructed tableside, is a standout. Finish with a selection from the curated wine list, designed to complement each course.
