'Faroe Island salmon' on a menu is a REGION, not a producer — but in practice it overwhelmingly means Bakkafrost, the dominant Faroese farmer, which achieved 100% ASC certification of its Faroese farms after a seven-year assessment (first ASC-certified farm in the Faroes; group-wide including Scotland reached 100% by 2026). ASC is the most stringent aquaculture standard, with 400+ audited points covering fish welfare, sea lice, smolt production, feed production and environmental impact. Certified, verifiable and above the salmon-farming norm; not exemplary because it is very large-scale net-pen aquaculture and the menu claim identifies a country rather than a farm site.

Caveats

GEOGRAPHIC-CLAIM FLAG: Mae Daly's 'Faroe Island salmon' names an ocean region, not a farm — the same class of claim as 'Scottish salmon'. It is a better-than-average region claim because the Faroese industry is fully ASC-certified, but push the venue to name the producer. Farmed, not wild.
