Quality assessment
The largest lamb PACKER in the United States — an employee-owned (ESOP since 1981, ~475 employee-owners) processor that harvests roughly ONE THIRD of all lambs slaughtered in USDA facilities each year, ~300,000 head/yr at the Denver plant alone. It buys from American lamb ranches; it does not raise lambs. Employee ownership and domestic-lamb sourcing are genuine positives over imported Australian/NZ lamb, but the name on a menu identifies a slaughterhouse, not a grazing practice, breed program, or farm.

Caveats
DOWNGRADE: Bazaar Meat menus 'Lamb from Superior Farms, Colorado' — Colorado is where the PLANT is, not where the lamb was raised. This reads to a diner as a Colorado ranch. It is a packing house. OWNERSHIP (2026-08-19): 100% EMPLOYEE-OWNED (ESOP) via Transhumance Holding Co. since 1991, 400+ employee-owners (esopassociation.org; superiorfarms.com/sustainable). Recorded as 'cooperative', the nearest value in our enum — an ESOP is employee ownership, NOT a farmer cooperative. Note this cuts against the downgrade above: it is a packer, but it is not absentee-owned.
