Quality assessment
Family company founded 1956 in La Alberca, Salamanca, and the FIRST Iberico producer authorised by the US government to export Iberico products to the United States — a hard regulatory fact, not marketing, and the reason most genuine Iberico in American kitchens traces through Fermin. Top line is 100% Iberico, bellota (acorn-fed), free-ranging in dehesa oak forest during montanera and cured up to 48 months in the mountain climate of La Alberca. Same state-audited label system as Cinco Jotas; same exemplary standing when the 100%/bellota tier is the one being served.
- Scale
- Mid family company; USDA-approved export operation.
- Feed & inputs
- Acorns exclusively during montanera for the bellota line — a legally audited claim under the Iberico norm.
- Animal welfare
- Free-range dehesa montanera for the acorn season.
- Environmental
- Dehesa silvopasture in a World Heritage-designated natural reserve area.
- Transparency
- HIGH — Iberico norm seal on the leg plus USDA/FSIS export authorisation, both independently checkable.
Caveats
Fermin sells MULTIPLE tiers, including crossbred (50%/75% Iberico) and non-bellota lines, and at least one retailer lists a USDA Organic Fermin ham. Verify WHICH line a venue serves — 'Fermin Iberico' alone does not mean 100% bellota. Not yet linked to a venue in our graph; carried from the CEO purveyor list.
Iberico ham producer founded 1956 by Fermin Martin and his wife in La Alberca, Salamanca (Castilla y Leon), within the Sierra de Francia UNESCO Biosphere Reserve; known for jamon iberico de bellota (acorn-fed) and was the first Iberico brand imported to the US. Certified to BRC and IFS food-safety standards.
