But Flannery publishes NOTHING about whose cattle it buys beyond 'the highest quality beef from within the United States'. Third-generation California butcher and dry-ager. Bryan Flannery Sr apprenticed under French butcher Henry Bercut, opened his own San Francisco shop in 1963; the retail store closed in 2011 and the business now sells hand-selected, dry-aged beef to chefs and direct customers.
