Quality assessment
100% grass-fed AND grass-FINISHED beef from a collective of north-west Tasmanian farms under Greenham's NEVER EVER Beef Program, which since 2012 has required lifetime traceability and prohibits grain and grain by-products, antibiotics INCLUDING ionophores (rumensin), steroids and GMOs for the animal's whole life. Ionophore exclusion is the detail that separates a real never-ever program from marketing — most 'no antibiotics' beef still uses them. Combined with Certified Humane and genuine grass finishing on high-rainfall Tasmanian clover/rye pasture, this materially exceeds category norms.

Caveats
It is a COLLECTIVE of farms under a program, not one property — a menu saying 'Cape Grim' names a region + program, not a ranch. Echo & Rig lists it as a 'ranch partner', which slightly overstates the relationship. Grass-finished means less marbling than grain-finished wagyu — a legitimate flavour difference, not a defect.
