Omi beef is Japan's OLDEST branded wagyu (400+ year history, one of the three great wagyu alongside Kobe and Matsusaka) and is a REGISTERED GEOGRAPHICAL INDICATION in Japan's GI system — a government registry entry, not marketing. Certification requires the animal to be born, raised and processed within Shiga Prefecture, spend its longest rearing period there (minimum 12 months, typically 28-32 months total), grade A4 or A5, and carry complete birth-to-processing documentation. Okaki owns and manages its own farm in Shiga and is an established Omi producer. GI registry + named farm + mandatory full documentation clears exemplary.
