Quality assessment

The nation's FIFTH LARGEST BEEF PACKER — a slaughter and fabrication business harvesting ~2,400 head/day (expanding toward 3,100), ~1,500 employees, exporting to ~70 countries. It buys finished cattle from independent feeders, ~90% within a 200-mile radius of Omaha. Third-generation private ownership and regional cattle sourcing are genuine positives, but the name on a menu conveys a packing house, not a farming practice. There is no breed program, no welfare certification, and no farm-level traceability behind the label.

Scale
Very large — ~2,400 head/day, ~1,500 employees, 70 export markets.
Feed & inputs
Conventional grain finishing at independent Nebraska/Iowa feedyards; no restrictions published.
Animal welfare
No third-party welfare certification found.
Environmental
Regional sourcing (~90% within 200 miles) reduces live-haul distance; no third-party environmental certification found.
Transparency
Low at farm level — sourcing radius is published, individual origin is not.

Caveats

CHEF-RELEVANT DOWNGRADE: Barry's Downtown Prime menus it as 'Greater Omaha FARMS, Omaha NE' — there is no such farm. This is a packer brand. It says the steak was graded and fabricated well; it says nothing about how the animal was raised. OWNERSHIP (2026-08-19): third-generation FAMILY-OWNED, founded by the current CEO's grandfather over a century ago (greateromaha.com, Henry Davis Meat Industry Hall of Fame release). An industrial-scale packer that is genuinely family-held — scale and ownership are independent variables.

Single-source beef processor in Omaha, Nebraska since 1920, sourcing cattle within a 250-mile radius from small family-owned regional producers; ships to 70+ countries.
