While The Avery has many things that make it one-of-a-kind, it’s the people behind it that make all the difference.
Boise natives and founding partners Cal Elliott, Ashley Elliott, and Michael Horaechea formed this partnership around one central idea—to bring something completely new to Boise while remaining true to its roots. Through their wealth of experience, dedication, and local roots, they have not only been able to bring that vision to life in the property but also within the people.
CHEF CAL ELLIOTT
A Boise native, Chef Cal Elliott returned home after building a celebrated culinary career in New York City, where he worked in acclaimed kitchens, earned a Michelin star as Executive Chef of Dressler, and opened several successful Brooklyn restaurants.
In 2023, Cal brought his vision full circle with the opening of The Avery Hotel & Brasserie , a thoughtfully restored boutique hotel in downtown Boise. Alongside local partners, he helped transform the historic Tiner Building into a vibrant gathering place rooted in community, hospitality, and exceptional food.
At The Avery Brasserie , Cal draws on decades of experience while embracing a simple philosophy: create memorable meals that bring people together. Designed to feel as welcoming to neighbors as it is to travelers, the brasserie has become a favorite gathering place for locals, reflecting Cal’s belief that great restaurants are built on connection, community, and a sense of belonging.
As one of the few independently owned and operated boutique hotels of its kind in Boise, The Avery reflects Cal’s deep commitment to his hometown. His dedication to thoughtful hospitality, preservation, and culinary excellence has earned him recognition as a multi-year James Beard Award semifinalist, while helping establish The Avery as a distinctly local destination shaped by Boise, for Boise.
Today, Cal remains committed to creating spaces that celebrate the city’s history, culture, and growing food scene, welcoming visitors and locals alike to gather, share stories, and enjoy a memorable meal.
ASHLEY ELLIOTT
Ashley is a designer with a wealth of hospitality experience at some of New York’s most esteemed hotels and restaurants, including the Breslin, a Michelin-starred restaurant once housed in the Ace Hotel New York.
She was General Manager of Rye and its speakeasy counterpart, Bar Below Rye. Ashley was trained at the Parson’s New School of Design in New York, and her degree greatly informs her lead role in the ongoing design transformation for The Avery project.
Ashley’s love and appreciation for authentically preserving history within contemporary, accessible luxury will endear her to all of The Avery’s future patrons.
