Chefs Max Natmessnig & Marco Prins Raised in Austria, Chef Max Natmessnig began as a young stagier in Lyon, France, at L’Auberge de l’Ile Barbe . After kitchen roles in Holland, Paris, and Germany, he joined the original Downtown Brooklyn location of Chef’s Table at Brooklyn Fare in New York. There, he reconnected with Chef Marco Prins, with whom he first worked in 2010 at 3 Michelin-starred Oud Sluis in the Netherlands. Following a brief return to Europe, Chef Natmessnig is pleased to be cooking alongside his colleague and former Chef’s Table alum, Chef Prins. Originally from Holland, Chef Marco Prins discovered his love of cooking early. The son of a flower farmer, he was inspired by his mother’s home-cooked meals and pursued a culinary career at 16. After culinary school in Rotterdam, he worked in Michelin-starred restaurants across New York and Europe before joining Chef’s Table at Brooklyn Fare in 2014. Reunited with Chef Max after their 2010 collaboration at Oud Sluis , the pair are now working together for a third time, leading an international team that stewards this unmatched epicurean experience.
