Culinary Director

Born and raised in Peru, Carolina Zubiate discovered her love of cooking at an early age through her grandfather, who prepared meals for her every day until she was 13 years old. Those moments around the table sparked a lifelong passion for food and continue to influence the way she cooks today.

Carolina began her professional culinary career in the Washington, D.C. area before relocating to Denver more than a decade ago. Throughout her career, she has worked alongside accomplished chefs whose mentorship helped shape her technique, creativity, and thoughtful approach to hospitality. Along the way, she has remained deeply connected to her Peruvian roots, creating pop-ups and collaborative dinners that celebrate the flavors of Peru while embracing the seasonal ingredients and agricultural landscape of Colorado.

Today, as Culinary Director at BRUTO, Carolina brings together the traditions that shaped her childhood with the experiences that have defined her career. Her cuisine is rooted in memory, guided by curiosity, and driven by a deep respect for both heritage and place.

Brutalism, a movement of ethic over

Aesthetic

The name derives from the French for raw concrete – Béton brut. When we think of Brutalism, a certain set of images comes to mind. Bold shapes, rough surfaces, expression of structure, imposing scale. This is not the only way of thinking about it.
