Butcher Girls

Caveats

Butcher Girls is a NY-based (Dobbs Ferry) virtual/subscription butcher shop, not a farm -- entity_kind=processor. They cure/process meat sourced from other farms; Chifa's cured lap cheung sausage is a custom collaboration product. Live domain (ny.butchergirls.co) returned HTTP 402 on 2026-08-23 (cause: tooling-cannot-read-it, likely business/site inactive) -- wayback snapshot substituted. Two-independent-press corroboration for the Chifa relationship specifically (LA Times + W Magazine, the latter quoting the venue's own co-owner).
