Quality assessment
A real family farm AND creamery: founded 1986 by Cindy Callahan in Sonoma County, still Callahan-owned, and the FIRST sheep dairy west of the Rockies — they began milking their own flock and making cheese in 1990, and the flock still grazes the hillsides around the creamery. Whole (not skimmed) sheep and Jersey cow milk is a genuine product distinction. Held at solid rather than exemplary because volume is no longer all their own: sheep milk is sourced from a 'small network of local sheep dairies' beyond the home flock, and Jersey milk comes from local dairies, so it is part single-farm and part aggregator, with no organic or animal-welfare certification located.
